Mare milk

Abstract
Mares produce large amounts of milk : ca 15 kg/d for a mare weighing 500-600 kg. Its composition is rather closed to this of human milk and, for some components, can be modified especially by feeding. This milk is normally fed by foal. However, when mares are milked, it can be used for the processing of koumiss, a dairy product which is known for its therapeutic activity. This milk can also be used in cosmetology, for the obtention of proteic fractions or as a substitute of human milk. Mare milking must be frequent due to the low capacity of the udder. Specific milking machines have been conceived for mares.
