Procedures developed to identify and guarantee the quality of products from the agro-food industry. An example of their use in the milk-cheese section in the Northen Alps

Abstract
In France, a number of procedures are being developed such as "Appellations" to promote agro-food product quality and conformity certification to guarantee quality for the consumer. Equivalent labels are studied at the European level. In the same way, a global strategy is being set up for the denomination and the defence of products and also for the guarantee of product quality. This strategy is based on norms and quality assurance systems. These procedures will have to be adapted to the specific case of regional and local products and their processing since these are often on a small scale production.
